Spiced Aubergine Salad Recipe

This amazing vegetarian dish can be served as a starter or as a main course for sharing. The roasted cacao nibs provide an earthy, peppery spice that pairs perfectly with the likes of aubergine, hummus, olives and pesto, and their nibbly texture plays just as important a role. Serve this up with grilled peppers, asparagus or baby artichokes and plenty of warm crusty bread to mop up the juice.
