We also use plenty of cacao to create our chocolates, even when we’re making white chocolate. A high cacao percentage doesn’t always lead to darker chocolate, but it does help us use less sugar in our recipes - which can easily overpower the natural chocolate tones. We consistently use at least 36% cacao in our white chocolates, helping us to ensure we retain the deep flavours and complex notes of the cacao bean. The end result is a rich and satisfying chocolate experience, with all the lightness and creaminess that you’d expect from high-quality white chocolate.

All our cacao is ethically grown, too. Hailing from our very own Saint Lucia cacao farm and elsewhere around the world, we work closely with our farmers and their communities. We don’t just want our chocolate to taste amazing, we also want it to have a positive impact on the people who have a hand in creating it.
