If you like your tipsy chocolate truffles bursting with fiery alcohol, you’ll find a new favourite in mezcal – an up-and-coming spirit making a name for itself as a bolder alternative to tequila. To create tequila, agave is traditionally steamed in a brick oven. For mezcal, however, the agave is roasted in roaring underground pits, which results in a brooding smoky flavour profile. It’s this wonderfully intense smokiness that takes centre stage in our Mezcal Chocolate Selector.

We use premium mezcal, which we pour with abandon into our signature, mellow 40% milk chocolate to make a luxurious ganache. Through experimenting with different chocolate grades, our chocolatiers found that milk chocolate pairs particularly well with smoky notes, so it was the natural choice. The ganache is sealed in 70% dark and a green spot decoration – a nod to mezcal’s hero ingredient, the agave plant – finishes this recipe off with a flourish.
