We use a high percentage of cocoa to keep the quality high - adding more sugar, and less cocoa, dims the delicate notes of chocolate. As we directly grow some of our cocoa beans on our very own St Lucia plantation, we have all the knowledge necessary to ensure the cocoa bean is nurtured in each stage of production, so we can deliver the very best product.
